Dr Libby Swanepoel is an Associate Professor in Nutrition and Dietetics, co-founder of UniSC’s Seaweed Research Group, and Health and Communities Research Theme Leader for the Australian Centre for Pacific Islands Research, and a current Superstar of STEM. Libby leads and contributes to multidisciplinary projects across Australia and the Pacific, exploring seaweed’s nutritional potential, climate benefits, and role in sustainable livelihoods. Her work integrates food technology, social science, and community-led innovation, to build inclusive, resilient aquatic food systems.
